My Indian Chicken Curry Recipe

Us Brits are addicted to our curry, especially a Saturday night curry and they come in all types, strengths and flavours. I love to cook home made curries and one of my all time favourites is one I accidentally discovered while living in Portugal, watching Gordon Ramsey and using ingredients that I could rustle up from those available in Portugal.
Luckily, I always have a good collection of the main spices in my kitchen, so I experimented with a few curries until I settled on one that provided the balance of flavours I wanted.
The main ingredients for this curry are:
- Fresh good quality chicken breast 500g
- 1 14oz tin of chopped tomatoes
- 1 large onion
- 4 cloves of garlic
- 1 fresh red chili deseeded
- tomatoe paste 1 tablespoon
- a bunch of fresh coriander
- Chicken stock about 300ml
- various spices (described below)
- 5 tablespoons of olive oil
This recipe should feed at least 4 hungry people. Chop the chicken into bite sized pieces and place in a dish covered with clingfilm. Marinade with extra garlic and lemon juice if you want. Next, finely chop the onions garlic and chili and place in a deep frying pan with the oil. Start frying them on a high heat.
When soft and translucent tip in the spice mixture and fry while stirring for a couple of minutes, then tip in the tomatoes and paste and cook for 5 to 10 minutes. Then use two thirds of the coriander, chopped roughly, and put in the chicken stock. Leave bubble on a low heat for 45 minutes.
After 45 minutes, wait for the sauce to cool a little then whizz it up in a blender until smooth. Now add the chicken pieced and cook until tender then add the rest of the coriander.
Serve with plain rice and nan bread.

I always get my spices from The Rye Spice Company . They have an excellent Tikka Masala mixture, a great mild curry mixture and a perfect garam masala. This recipe calls for 3 heaped table spoons of Tika masala, half a tablespoon of mild curry and half of garam masala.
